Whether you bake this batter into muffins or a cake, the result is a sticky, delicious and fragrant crumb that only requires a few ingredients.
• 1 whole orange
• 2 eggs
• 2 tbsp honey or maple syrup
• A pinch of salt
• ¼ cup coconut flour
• 1 tsp baking soda
Step 1: wash your orange very well. Next, cut off the top and bottom (the belly button and the little stem). You can boil the orange whole in water on the stove, pressure cook, or microwave with a splash of water in a bowl until tender and cooked through. Let cool before handling.
Step 2: using either a food processor, blender or immersion blender, blitz the orange, eggs and honey until completely smooth and combined.
Step 3: sift in salt, coconut flour and baking soda and continue mixing together.
Step 4: pour into either a muffin tray or prepared cake pan and bake at 350 F until golden brown and a toothpick inserted into the thickest part comes out clean. Baking times will vary depending on what you’re making. Mini muffins take anywhere from 15-25 minutes approximately, while an 8 inch round cake may take up to 40 minutes.
